Brewer’s Spent Grain (BSG) is the solid residue of malt used in the brewing process. This major by-product is of food-grade right after leaving the mashing process. Yet, to date, it is mostly sold as low-cost animal feed or disposed of as landfill. With the increasing consequences of climate change reducing crop yields and a continuous rise of the global population, new approaches are investigated to valorize BSG for human consumption.
